Ingredients will serve 2 big or 4 small eaters:
For the Krapow sauce:
1 tablespoon soy sauce
1 tablespoon oyster sauce
2 teaspoons fish sauce
1 teaspoon white sugar
1 teaspoon brown sugar
1/3 cup chicken broth / water with a chicken Maggi cube
Instructions:
Mix all the ingredients required for the sauce in a bowl.
For the Dish:
2 tablespoons cooking oil
½ kg boneless chicken thighs / 1 medium sized chicken breast, thinly sliced
5 cloves garlic, minced
1 medium sized onion, sliced
2 tablespoons minced Thai chilies, Serrano, or other hot pepper
Krapow Sauce
1 cup basil leaves, sliced very thin with a sharp knife.
Instructions:
Cut all ingredients before you start with your dish.
Set a flat vessel on high heat and add oil.
Add the chicken and sauté. (So that the chicken does not stick to the pan)
In case there is chicken broth formed at this stage, empty the same into the sauce and continue to sauté the chicken.
Spread the chicken to the sides creating an empty portion in the middle.
Add garlic and sauté for 2-3mins.
Spread the mixture to the sides creating an empty portion in the middle.
Add onions and chilies and sauté for 3-4 mins.
Add salt to taste.
Add half the sauce made and sauté for 3-4 mins.
Add the basil leaves and sauté for another 2-3 mins.
Add the remaining sauce.
Cover the vessel with a lid and continue to cook on low heat for 5 mins.
Your Chicken Krapow is best enjoyed with rice or bread.
